The olives come from two prestigious production areas: Belpasso (CT) and Campobello di Mazzara (TP), from 30-40 year old olive groves at 300-600 meters above sea level. The harvest is done by hand-picking between October 10 and November 10. Extraction takes place with the cold continuous cycle method, thus preserving the organoleptic characteristics.
The organic Zammara PGI Sicilia Extra Virgin Olive Oil has a bright color, tending towards emerald green.
With an acidity level between 0.13 and 0.20, it offers a medium-intense fruity aroma with hints of green tomato and artichoke.
On the palate, the persistent bitter and spicy taste is accompanied by notes of green tomato and wild herbs. Certified PGI Sicilia.
