The olives come from two prestigious production areas: Belpasso (CT) and Campobello di Mazzara (TP), from olive groves 30-40 years old at 300-600 meters above sea level. Harvesting is done by hand-picking between October 10 and November 10. The extraction is carried out with the cold continuous cycle method, thus preserving the organoleptic characteristics.

The Zammara PGI Sicilia organic extra virgin olive oil presents a brilliant color, tending towards emerald green. With an acidity ranging between 0.13 and 0.20, it offers a medium-intense fruity aroma with hints of green tomato and artichoke.
On the palate, the persistent bitter and spicy taste is accompanied by notes of green tomato and wild herbs.
