90% Nocellara dell’Etna oil with 10% Moresca and Biancolilla. Hints of tomato, artichoke, fresh grass and bitter almond. Light bitter and spicy balanced, enriched with herbaceous notes.
It enhances fish, salads and vegetables.

The olives of Nocellara, Moresca, and Biancolilla come from the lands of Belpasso and Ragalna (CT). The olive groves, consisting of ancient trees, extend between 500 and 600 meters above sea level. Harvesting by hand-picking takes place from October 15th to November 15th. The continuous cold-press extraction preserves all the qualities of this precious oil.

The varietal composition includes 90% Nocellara dell’Etna, enriched with 10% Moresca and Biancolilla. The oil has an emerald green color with yellow reflections and an acidity between 0.13 and 0.20. Medium fruity aroma, with hints of tomato, artichoke, fresh grass, and bitter almond.
The taste, with a slight balanced bitterness and spiciness, has notes of wild herbs, artichoke, and tomato.

Zammara Monte Etna PDO extra virgin olive oil can accompany cooked or raw fish, fresh salads, and vegetables, enhancing every flavor.
