The drupes come from an area encompassing Belpasso and Paterno’ (CT), from olive groves that are 30-40 years old and reach an altitude of 400-500 meters above sea level. The Nocellara is hand-picked between October 10 and November 10. The extraction process is done with the cold continuous cycle method.


The Nocellara Etnea Monocultivar extra virgin oil presents a beautiful emerald green color with yellow reflections. Its acidity ranges between 0.13 and 0.20. It offers a medium fruity aroma with aromatic notes of artichoke and fresh grass. On the palate, it is slightly bitter and spicy, with fresh accents of green tomato and wild herbs.

The Zammara Monocultivar extra virgin olive oil pairs elegantly with both cooked and raw fish, salads, and vegetables, enhancing their flavors.
